Characteristics
White to yellowish in color, dry, originating from the macerated endosperm of the locust bean gum (carob) tree seed "Ceratonia Siliquae". Free of chemical additives, it is therefore considered a natural product.
Uses
The Locust bean gum is used as a stabilizer and thickener in all food products such as ice cream, yogurt, sauces/dressing, mayonnaise, ketchup, dietetic food, marmalades, sweets, soups, pastry and others.
