Green Tea Extract
Thea-flan
Green
tea extract "Thea-flan" is manufactured in a highly safe way preserving
its value for
use in food materials, food additives, and highly functional foods.
"Thea-Flan" contains bio-active polyphenolic compounds such as Catechin
at very high concentration.

Catechin family contained in tea are types
of polyphenolic compounds more commonly known as tannin. They are
known to have various chemical, bio-chemical, and medicinal values.
What is Catechin?
Ancient writings mention that tannin was
used to tan leather. In 1796, Seguin found in oak gall, used as
tanned hide material at the time, that tannin is the leather component.
In the 1900's the study of tannin intensified and in 1913 Deuss
separated tannin from tea and called it white tannin. Scientists
confirmed that the tannic constituent found in tea is condensed
tannin and the constructional unit of this tannin is the catechin
family.
The characteristic of tannin is the combination with protein and
metal ion. From the basic study for its uses in natural food additives
and biological active substances, the study of one use of tannin
has moved on to more applied research.

Characteristics of Catechin
Table 1 shows the characteristics of catechin.
Catechin has high solubility in water and alcohol, and holds wide
utility toward water-type foods. Also, the general characteristics
are listed below.
1. Reaction to metal (Ca - settles, Fe - blue to black color)
2. Reaction to protein (settles, etc.)
3. Prevention of food oxidation
4. Astringency
5. Anti-microbacterial activity (cavity periodontal bacteria,
food poison bacteria)
6. Various medical activity (lowering cholesterol, anti-allergy,
etc.)
7. Deodorization (fish odor, oral odor, etc.)
